Vegan Apple Oatmeal Cookies

ingredients
- 1⁄2 cup light brown sugar
- 1⁄2 cup white sugar
- 3⁄4 cup sweetened applesauce (unsweetened will work)
- 1 cup whole wheat flour
- 1 teaspoon baking powder
- 1 pinch salt
- 1 cup rolled oats
- cinnamon, to sprinkle on top
directions
- Preheat oven to 375°F.
- Mix sugars and applesauce.
- Add flour, baking powder, and salt and mix well.
- Add rolled outs.
- Drop by rounded teaspoons onto a lightly greased cookie sheet.
- Sprinkle with cinnamon.
- Bake for 10 minutes.

Yumm, these are really good. They're a little sweet even with unsweetened applesauce, if i was using sweetened 'sauce I would cut down on the sugar a little bit. I also used pumpkin pie spice in place of the cinnamon, and it was really good. It's a mix of cinnamon, nutmeg, cloves, ginger, and cardamom. Quite good!

Awesome cookies I loved em. A couple things for those who are making them though: 1: you can add any mashed bananas or any kind of dry fruit to the mix. I added raisons and cranberrys. 2: I found the mix a little thin, too much flower to oat consistency. I would rather have more oats than less oats. You may want to add another half a cup. 3: The cookies don't really settle because the batter is kind of thick so you have to make the cookies flat and thin so you don't end up with ball shaped cookies.

Mmm. I followed your example and am eating one right out of the oven. These are so good! Soft and sweet. The only changes I made were using 1/8 cup honey instead of 1/2 cup brown sugar because I didn't have any and baking soda instead of powder. I will be making these constantly! Thank you so much for sharing.
