Yellow Split Pea Soup

- 2 medium white onions, cut into 1 inch cubes
- 3 -4 cloves garlic, smashed
- 2 cups yellow split peas, about 1 lb
- 1 teaspoon dried oregano
- 1⁄2 teaspoon dried thyme
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 1⁄8 teaspoon hot sauce
- 6 cups fat free chicken broth
directions
- Put the onion in a large non stick saucepan over medium low heat.
- Cook for about 5 minutes, stirring constantly, until the onion is wilted and translucent.
- Add the garlic, stir and continue to cook for 1 minute.
- Stir in the split peas, then the seasonings, hot sauce and the broth.
- Raise the heat to medium and bring to a boil.
- Reduce the heat to low, cover, and simmer for about 1 hour, until the soup is fairly thick.
- Remove the cover and stir well before serving.

This is the easiest and best pea soup recipe I've found, I love it! I add ham or kielbasa and make it totally "no sodium added" except for those additions. I also add frozen mixed veg sometimes, too. Reminds me of a tin of store bought - flavour and consistency is perfect! (I also simmer this for a couple-few hours until it becomes thick, then take a potato masher to it before adding veggies and meat (if I do, it's great without them, too)).

Wow! It's a soaking wet, windy January day here in Scotland and this soup has just cheered me up so much. I had no hot sauce, so put in a bit of chilli powder and it's delicious. The peas could have done with cooking for a bit longer than recommended in the recipe, but that can be done next time. Mmmmmm!

My husband said this was the best pea soup I have ever made - it certainly was the easiest! Instead of making it on the stove, I dumped everything into a crock pot and let it cook all day. I did increase the seasonings and used a fresh chili pepper instead of the hot sauce. This had a nice thick consistency and great favor. Thank you for posting - I'll definitely make this one again.
