    Adaptation from a recipe found in the May/June 2009 issue of Vegetarian Times. This is a great way to use a variety of fresh herbs and provides a complete protein. I set aside some of the plain spaghetti and chickpeas for my kids. They love them with a little butter and a sprinkle of cheese.

    Directions:

      Cook spaghetti.
    2. 2
      Saute garlic just until lightly browned. Stir in herbs, chickpeas, tomatoes, and olives, simmer 3 - 5 minutes.

      Drain spaghetti, reserve some of the cooking water to thin the sauce if needed.

      Return spaghetti to the pot and add tomato/herb mixture. Season with salt and pepper.
