White Chili With Chicken

This is another variation of white chili with chicken. I found it was very easy and quick to make. It has good flavor but is not too spicy, so my kids really liked it too. Originally from Family Fun magazine.
Directions:

Warm the oil in a large saucepan over medium heat. Add onion and saute until soft (5-7 min). Stir in chili powder, cumin, oregano and garlic and saute for another minute.

Add beans, chicken corn, green chilies, broth and salt.

Bring to a gentle boil, then lower heat to simmer, partially covered, for another 10 minutes.

Add salt and pepper to taste.

Serve with cheese, if you like.

Makes 6 large servings.
