Very Easy Garlic Sauteed Spinach

- 1 lb fresh spinach, washed
- 2 -3 tablespoons extra virgin olive oil
- 1⁄2 - 1 teaspoon minced garlic, to taste (I use the kind in a jar)
directions
- In a pan large enough to hold the spinach, put olive oil and garlic, over medium heat.
- add spinach immediately and saute, moving the cooked spinach from the bottom up to keep things cooking evenly.
- when all of the spinach is wilted and the stems are tender, it's done.
- do not let the garlic brown or it will get bitter.

I just tried this tonight with fresh garlic, and I added a little salt and red pepper flakes, as well as a tiny pat of butter. It was INCREDIBLE. The garlic and spinach flavors complement each other so well! I had it with grilled chicken... my whole meal cost less than $3 (including all the spices) and it was SO MUCH BETTER than the carb-laden Chinese food I usually spend three times as much for. I cannot believe how easy, quick, delicious and HEALTHY this dish is, and I cannot believe it took me this long to make it! I am definitely going to make this one a staple!!!
