- 2⁄3 cup flour
- 1⁄2 cup sugar
- 1 1⁄2 teaspoons baking powder
- 1⁄4 teaspoon salt
- 2⁄3 cup soymilk
- 2 cups blueberries
- Combine dry ingredients, add milk and whisk until smooth.
- Pour into greased casserole dish and sprinkle with blueberries.
- Bake at 350 for 40 minutes.
I tried this recipe the other night and I was actually a bit disappointed. It/s not bad but it's not amazing either. It was a bit bland and the consistency was not what I was expecting. It tasted more like a sweetened biscuit than a cobbler in my opinion. I would recommend adding some spices to it such as vanilla, cinnamon, or something else to give it more flavor.
