      I used two cucumbers instead of one, added 1/4 cup feta cheese, and used grape tomatoes instead of roma. Very easy and tasty! Filling, too!

      Absolutely awesome. I thinly slice all the ingredients using my mandalin. I always use roma tomatoes and have used white wine balsamic vinegar on occasion. I have also added sliced black olives once in awhile. Serve at room temp for the best flavor. I love this as a side to grilled steaks or salmon.

      Cucumbers don't like me so I used zuchinni and made this just as the recipe directs. What could be better than fresh, top quality vegetables and ingredients? I love summer.

      This is how we make our salads all the time. I use regular vinegar sometimes instead of balsamic. The best part is fresh ingredients from the garden - I can't wait. It makes all the difference in the world.

      I sliced the English cucumbers very fine and used grape tomatoes which I quarted for this wonderfully flavorful and colorful salad! Definitely a Make-Again Recipe! Thank you, peleegal, for posting and sharing with all of us on RecipeZaar!!

      What a simple, simply delicious salad! Everything fresh from the garden. I used Lemon cucumbers, they are a small round cuke that are very sweet. You have to peel them they are a bit prickly. They are also called apple cukes. Had to sub a sweet onion for the red one. Very enjoyable - I made it up in the early AM added Balsamic & Pepper just before serving Thanks Peleegal for a lovely refreshing lunch
