Really simple and healthy dessert. The only change I made was to use 1/4 cup Splenda in place of sugar. We each ate one the first night with a few chocolate chips sprinkled on top and DH loved it and I thought it was ok. The next night we ate the remaining two, again with chocolate chips. I must say it was much better the second night after the flavors gotten conferrable with each other. Thanks so much for the post.

Wow, this is such a great concept! It works out beautifully and tastes sooo yummy! You would never think its healthy and free of dairy! The fact that it is quick to whip up is an additional plus. We all enjoyed this a lot and Im sure Ill make it again. I think other fruits would work out nicely as well, like e.g. berries or peaches. Cant wait to try these variations, too. YUM!
I did not use any sugar and upped the amount of banana used, but other than that stuck to the recipe and it was great!
THANK YOU SO MUCH for sharing this great recipe with us, the80srule!

I don't think this tasted that much like banana pudding, but it sure was tasty! It wouldn't be vanilla pudding without Nilla Wafers, but since those aren't vegan, I've been on the lookout for something similar. I found a brand called Kedem who make a vanilla tea biscuit with a very similar flavor to those delicious Nilla Wafers. I found them in the Kosher/Ethnic section at my local grocery store, Publix. Anyway, thanks for sharing this great treat!
