Good flavourful potatoes. Nice blend of spices with a garlicky edge and a mustardy tang. The only sub I made was to use olive oil. Very easy too.

I make roasted potatoes fairly often, but have never tried with dijon mustard before. I really like it! I always just eyeball the hebs and spices and now I will keep in mind that I can add the mustard for nice twist :)

We were split on these at home ~ DH & DD loved them, but they weren't my favorite way to eat potatoes. I'm not a big mustard fan and I think that's why I didn't care for them that much. I think that I would try these again, but maybe would reduce the amount of mustard.

This was just yummy! We truly enjoyed this for dinner tonight. Very easy to prepare. I made as posted, but DH had to have with a bit of ketchup. :) Thanks for posting.

These were a great side dish to "call the Fire Department" Hot Wings. For my family of MEN nothing can ever be spicy enough. I omitted the tarragon and added Greekseasoning in place of. These have great flavor and I thank you. Made for I Recommend~

Very good potatoes. i sprinkled with salt and pepper when they came out of the oven. No condiments needed; these were perfect. I substituted Italian herb seasoning for the tarragon.

So easy and so good! I made this to go along with dinner tonight and my fiance really loved them. They came out perfectly crispy on the outside, tender on the inside, and had nice flavor. I used Yukon Gold potatoes and garlic olive oil (we LOVE garlic!), and left out the tarragon as I had none in the house. I might increase the garlic, paprika and red pepper next time, though, because I like things a bit spicier. This is a real keeper. Thanks for sharing!

Very good. I did not have any tarragon, but it still turned out really good.

Really delicious! I doubled all the seasonings as I usually do, and parboiled the potatoes beforehand too. Also used a hotter oven and about 45 mins to crisp up, tho that might be because I have the worst oven ever! Ah, the joys of renting... Thanks for the recipe, will definately be used again!

I wanted something other than mashed or baked potatoes for a dinner party. These were so good and easy to do. I prepared them in the morning and let them marinade in the spice mixture until I cooked them. Actually had good comments on it. Thanks MaeEast for helping out at my dinner party!!

Good potatoes! The dijon flavor is very mild, as is the garlic- just enough to know it is there, and not enough to overpower the flavor of the tarragon. The only change I made was to turn the potatoes halfway through the cooking time (this helps them crisp up). Thanks for posting!

Hubby has an aversion to mustard, so unfortunately had to leave it out. This recipe was still good without it. I also used olive oil. Made it with a pork roast last night and it was a good side dish. Thanks for posting.
