Smoky Celeriac and Bean Soup

"Celeriac (celery root) was on sale at the grocery store. I've always wanted to cook with this, so came up with this recipe using the random things I had in my kitchen. It's cheap and healthy, enjoy!"

  • Saute onion in oil for 10 minutes.
  • Add spices, stir until fragrant (30 seconds - 1 minute).
  • Add celery root (celeriac) and cover with water.
  • Bring to a boil, cover, and simmer until celeriac is soft (about 20 minutes).
  • Meanwhile cook greens in 1 cup of water.
  • When celeriac is soft, add can of beans with liquid, and puree in a blender. Return to pot.
  • Mix in greens with their liquid. Add salt and pepper to taste.

Vegan-ish: I don't usually eat eggs or dairy, and most of the time try to be gluten-free. I won't usually turn down a slice of chocolate cake. I'm not anal about this stuff.
