    This is a great weekend breakfast because you prepare it the night before and just slide it in the oven in the morning! Believe it or not, it doesn't even need to be served with maple syrup, because the margarine and brown sugar caramelize on the bottom of the bread slices and make them deliciously sweet. I adapted this recipe slightly from one I found online at www.healthyfridge.org.

      Drizzle melted margarine in 9x13-inch baking pan and tilt pan to evenly distribute.

      Place brown sugar in small bowl; with fork, stir in cinnamon.

      Sprinkle mixture evenly over melted margarine in baking pan.

      Combine 1/2 cup egg substitute and 1/4 cup soy milk in glass pie plate; mix with fork until blended.

      With fingers or fork, dip bread slices into egg mixture to coat both sides.

      You may need to add an additional 1/4 cup Egg Beaters (1 egg worth) and 2 Tbsp more soy milk if there doesn't seem to be enough to coat all the bread slices.

      Lay slices over sugar-cinnamon mixture in baking pan or dish; pour any remaining egg mixture over the bread slices.

      Cover pan with foil and refrigerate overnight.

      Remove pan from refrigerator 45 minutes to 1 hour before baking; let stand on the kitchen counter to reach room temperature.

      Preheat oven to 375 degrees F.

      Place pan of French toast in hot oven and bake 25 minutes.

      Remove pan from oven and carefully remove foil from pan.

      Return pan to hot oven and bake for 15 minutes longer.

      Remove pan to cooling rack.

      Sprinkle French toast with powdered sugar; serve warm.

      I made this using regular dairy products, and found the recipe to be absolutely fabulous!! No need for syrup, just a big cup of coffee and you're set !! After getting wonderful help about the proper bread to use, I assembled the dish and left it in the fridge overnight. The next morning, I crawled into the kitchen, put this in the oven, started the coffee pot, and crawled right back into bed. When the oven timer went off, I awoke to the delicious aromas of the casserole and coffee..I rolled out of bed, and rolled right into a big mug of joe, and a plate of the best French Toast I've had in ages!! Thank you for this recipe..I detest mornings, but this recipe is worth waking up for !! Thanks again!! Teresa

      Great sleepover fare ! Tastes like real French toast without the hassle. The execution was a bit messed up , so some slices were a bit dry but thats not your fault. What we did ( accidentally , but it worked ! ) was turned the bread in margarine , so that both sides were cinnamon-y. I served it with Chocolate Syrup and it went fabulously - little heavy , but mmmmmm it was good. Next time I make this ( there WILL be a next time ! ) I will add 1/2 teaspoon grated lemon or orange zest to the cinnamon.
