Salmon Salad

This is a perfect, light and summery salad! It has really bright flavors, and is a new favorite at our house!

Ingredients:

Servings: 4

• ¾ lb skinless fillet salmon
• 1 large cucumber , peeled, seeded, and chopped
• 1 large red bell pepper , seeded and chopped
• 4 scallions , chopped
• ½ lemon, juice of (or 3T. lemon juice)
• 3 tablespoons extra virgin olive oil

Directions:

1. Preheat oven to 350. Place the salmon in a medium baking dish and bake, covered, until cooked through, about 15 minutes. Let stand until cooled.
2. In a medium bowl, mix the cucumber, bell pepper, scallions, lemon juice, and olive oil together. Add the baked salmon, flaking the meat with a fork, and mix until well combined.
3. Season with salt and pepper.
