    Traditional atole drink from Mexico city. Make it on a cold winter night and you will love it! Reheat it in the morning and you have a nutritious drink for the kids. I warm the milk in the microwave to save about 10 minutes cooking time.

    Directions:

    1. 1
      Place the water in a large pot, bring to a boil. Add the rice and the cinnamon stick, mix well. Bring to a boil again and cook until the rice is translucent but not cooked through. Add the milk and bring to a boil again. When the rice is very soft, add the sugar and stir to dissolve. When it boils again add the cornstarch previously dissolved in the 1/4 cup water. Cook stirring often until it thickens.

      I've had this before and it's soooo good. But I had it with rice flour and milk, so there was no need for the rice or water. Then we just cooked it all till it was thickened to whatever we liked.

      I love trying authentic recipes such as this. A nice alternative to coffee on a chilly fall morning. I am sure my toddler will enjoy this as well. I used almond milk and just a couple packets of Stevia which made it sweet enough for my taste. Made for Bevy Tag Oct 2008!

      DD (toddler) and I absolutely love this on a cold night ect. It has a lovely cinnamon flavour. DH however tried it warmed up the next day and did not like it. I have a feeling he doesn't like cinnamon in sweet dishes. I used homogenized milk, brown sugar and tapioca starch to be corn free. I blended it after a little in my blender to break up the Basmati rice I used. Be careful it is very hot for a while after. I will make this again.
