Red Bean Tomato Salad

"I had some red beans left over in a can and I invented this simple way to finish it off. I liked it. Let’s see if anyone else will. :-) By the way, it is one serving because I often only eat salad. It probably would be enough for two if you serve it as a side dish."

  • Drain the red beans; wash with cold water and place in a bowl.
  • Cut the tomato into cubes as large as you like; add to the beans.
  • Season with olive oil, salt and black pepper; perhaps it might take some fresh parsley or chopped onion.
