This is a great (and fast!) recipe. The only change I made was to add a little extra spice to it. We had this with salsa chicken, and it went really well together. I'll definetely make this again. Thanks!

Very easy. I use spaghetti sauce instead of tomato sauce and serve with sour cream. I find the cumin is a little overpowering without it.

Very good rice and I enjoyed the spicy flavor from the chili powder and cumin. I used brown instant rice, more corn, and a bit more water could have been used. Topped with sour cream and served with Ww Southwestern Pork Chops - 4 Pts. by TeresaS. Made and reviewed for the photo forum's Lite and Low Recipe Event.

Pretty spicy! I made it in the microwave with 1 cup long grain rice and 2 cups water and without the corn. Cook the rice and water covered for 6 minutes on high and 5 minutes on 50% power. Add tomato sauce and seasonings. Cook 10 minutes on 50% power. Let rest covered about 2 minutes. Stir and serve. Thanks!

Everyone loved this recipe. I made it with 6 cups of rice (rice that would cook to 6 cups, not 6 cups raw), a 26 oz jar of tomato sauce, 1.5 cups of corn, and just over 2 cups of water. We are not big fans of spicy foods, so I only used 1 tsp of each spice in the whole recipe. If you use the full amount, watch out- it may be pretty hot.
