  • Sauté onion and garlic in oil till tender.
  • Spray a 9x12-inch oven proof pan with cooking oil spray or grease with oil.
  • Layer 1/2 the potatoes (sprinkle with salt and pepper) then all the celery, 1/2 the onion mixture, all the carrots, remaining potatoes (sprinkle with salt& pepper) and then remaining onion.
  • Cover and bake at 375°F for at least one hour or till vegetables are tender.

  1. Very simple yet tasty side dish -- my picky husband and I both enjoyed it! You're right: it's not as bland as you'd think. I made a half recipe, using cooking spray instead of oil, and left out the celery. Should have made the whole recipe!
     
  2. This dish is super flavorful and so low in fat! The only change I made: Instead of sprinkling with salt, I sprinkled with a bit of dry Ranch seasoning, and then pepper. Otherwise, I followed the recipe exactly. When these are done, the top layer is crisp, and it all reminds me of the vegetables you cook with your pot roast -- but no fat drippings. Very good. My husband also approved. Will make again!
     
  3. I did think it was a little bland. But it was still pretty nice. I omitted the celery because we don't like it. But the potatoes and carrots were nicely cooked and were a nice side dish. Mine did not turn out crispy at all though.
     
  4. So yummy! I didn't have celery on hand so I made it without. I added Greek Seasoning and it was great.
     
  5. Good change-of-pace side dish with any kind of meat. Not bland at all, but I did use Penzey Spice Brady Street Cheese Sprinkle instead of salt, and freshly ground black pepper. I made a half recipe in an 8x8 inch square dish. I wish I'd made more because the leftovers were good too.
