ingredients
- 28 ounces black beans
- 1 yellow onion, diced
- 3 garlic cloves
- 6 small tomatoes, peeled and diced (compari prefered)
- 1 (8 ounce) can hatch chiles
- 1 cup brown rice
- 2 cups water
- 1 teaspoon salt
- 1 tablespoon olive oil
- cooking spray
directions
- in a rice cooker, add the rice, water, olive oil, salt, and 1 clove of garlic, and turn the cooker on.
- while the rice is cooking, slice the remaining cloved of garlic. sautee the onion in cooking spray with the garlic till the onions sweat and turn clear. add the tomatoes and hatch chilis to the skillet and stir together till combined. add the beans and stir. turn off the heat and cover.
- to serve, scoop 1 cup of rice and top with the beans. enjoy.
