Pickled Dilled Beans

ingredients
- 2 lbs green beans
- 1 cup white vinegar
- 2 tablespoons pickling salt
- 2 teaspoons dill weed
- 1⁄4 teaspoon cayenne
- 2 cloves garlic, crushed
directions
- Wash beans, drain& trim ends; cut to fit jars.
- Cover beans with boiling water, cook for 3 minutes, drain well& pack lengthwise into hot jars, leaving 1/2 inch headspace.
- Combine remaining ingredients in a saucepan& bring to a boil; cover beans with pickling liquid, leaving 1/2 inch headspace.
- Remove any trapped air bubbles- I use a chopstick to do this.
- Adjust lids& process in a boiling water bath for 10 minutes.

On May 1, 2008 my husband and I started a new adventure. We'll be living in a 37 foot RV while our new home is under construction. Its out in the country on a dead end dirt road with lots of trees. For the next 4 months or so, most meals will be cooked on the BBQ and life will be full of challenges!
We love spending quality time with our friends & family - especially the grandkids!! The photo is 4 generations - my 84 year old mother, myself, my daughter & my youngest granddaughter - taken at the end of 2006.
