Pickled Dilled Beans

  • Wash beans, drain& trim ends; cut to fit jars.
  • Cover beans with boiling water, cook for 3 minutes, drain well& pack lengthwise into hot jars, leaving 1/2 inch headspace.
  • Combine remaining ingredients in a saucepan& bring to a boil; cover beans with pickling liquid, leaving 1/2 inch headspace.
  • Remove any trapped air bubbles- I use a chopstick to do this.
  • Adjust lids& process in a boiling water bath for 10 minutes.

  1. Talk about easy. I make this for family and friend picnics. One qt. jar lasts 10 minutes. People think I slaved. Be sure your beans are fresh and not to long on the vine.
     
  2. I am so thrilled to have found this recipe. My mom used to make "DILLY BEANS" when I was a child. They are wonderful and you need to hide them, or your kids will eat them all up. Thanx for posting.
     
  3. I love this--always have a jar open to munch while I'm making dinner. Also supposed to be great as drink stirrers for bloody marys. I put the cayenne in the bottom of the jar along with a few slices of vidalia onions.
     
  4. This recipe is also great with red pepper flakes (1/4 t. per pint), dill seed heads instead of weed and two or three black peppercorns thrown in for good measure!!

In the words of Tracy Byrd, "I'm from the country & I like it that way"!! On May 1, 2008 my husband and I started a new adventure. We'll be living in a 37 foot RV while our new home is under construction. Its out in the country on a dead end dirt road with lots of trees. For the next 4 months or so, most meals will be cooked on the BBQ and life will be full of challenges! We love spending quality time with our friends & family - especially the grandkids!! The photo is 4 generations - my 84 year old mother, myself, my daughter & my youngest granddaughter - taken at the end of 2006. I've participated in many contests & events here on Zaar but this is the first banner that I've posted.
