  • Combine water, salt, peas, lime juice and scallions in a saucepan. Bring to a simmer and cook until peas are tender, 3-5 minutes. Remove scallions and discard.
  • Transfer soup to a blender. Add pesto and process until smooth. Serve hot.

  1. We generally make Nigella's "Slime Soup" (pea and parmesan) and I thought this would be a nice alternative. I think it could be improved upon by substituting the pesto for fresh basil and a little stock and maybe sprinkling toasted pine nuts on top.
     
  2. I wanted to like this, and it's okay. It definitely is easy to make, but it is totally lacking in... something. I think the prefab pesto muddied up the flavours, which seemed generally flat. It's a good start, but will take some tinkering to make truly delicious.

After a Walt Disney World trip in Dec 2006 where I had to rent an electric scooter because I couldn't manage the walking, I decided to have gastric bypass surgery, which was done Feb 28, 2007. I lost 160 lbs (though I've gained back about 60 of that since). I can't eat as much as I used to, so I want every bite to be extra good!
