Mario Batali's way... He says it works well to put the tomatoes in right before you go to bed and remove them in the morning.
- Preheat the oven to 150 degrees.
- Slice the tomatoes in half lengthwise.
- Place cut side up on baking sheets.
- Combine the salt and sugar.
- Sprinkle a little bit over each tomato, about 1/2 teaspoon.
- Place in the oven.
- Cook slowly for 10 hours.
- Allow to cool.
- Refrigerate for later use.
