Orange-Scented Couscous

ingredients

  • 10 ounces couscous
  • 2 14 cups orange juice
  • 4 tablespoons slivered almonds
  • 15 ounces chickpeas, drained & rinsed
  • 14 cup raisins (or golden raisins or chopped dried apricots)

directions

  • Make couscous according to package directions (omit butter & salt), replacing water with orange juice and set aside.
  • Toast almonds until fragrant and lightly browned and set aside.
  • Heat chickpeas in a nonstick saucepan until warmed through and combine with couscous.
  • Add almonds and raisins and stir to combine.
  • If desired, pack couscous mixture into lightly oiled individual ramikins and unmold onto dinner plates before serving.

  1. Really good. I didn't include almonds as I'm not keen, nor chickpeas. One which will be done again. I suspect there is room for experimentation with various flavours of fruit juice.
     
  2. I made this for breakfast today and loved it. I replaced the chickpeas with chopped dried apricots and sprinkled the almonds and some cinnamon on it. It was wonderful, quick and very simple. A delicious Sunday switch for my usual oatmeal. Made for Photo Tag.
     
  3. We are crazy for couscous in this house and this recipe is so good...loved cooking the stuff in the OJ :) -and loved the flavor that it lent it... I don't buy it packaged so I just brought the juice (i had to dilute it somewhat with water because i only had one cup so i did 1cup grain, 1cup OJ and 3/4 H2O) to boil added the couscous and chopped apricot...was not in a almond mood (okay, I was too lazy to chop some up and toast them) so used a mix of pumpkin and sunflower seeds instead and heated those with the chickpeas - ...tossed in grated orange peel at the end (from the orange i juiced to boil) =ed DE- LISH& the most fabulously fun colors...thank so much mliss29!!! :) a new fave way to serve my Husband his favorite side! Made for the Healthy Choices Game & served with grilled tofu... but will be made again and again now :) {{and could be breakie the next day too!!! :)}}
     
  4. I really enjoyed this but both kids [4 & 7] were not too fussed about it. The baby really enjoyed it too [sans nuts] but I think that was because it was a fun texture and made a huge mess.
