North African Chickpeas

ingredients
- 1 medium onion, thinly sliced
- 14.79 ml minced garlic
- 14.79 ml minced fresh ginger
- 29.58 ml red wine or 29.58 ml cooking sherry
- 4.92 ml cumin
- 4.92 ml cinnamon
- 4.92 ml paprika
- 2.46 ml crushed red pepper flakes (or to taste)
- 236.59 ml water or 236.59 ml chickpeas, cooking liquid
- 2.46 ml salt (reduce if chickpea cooking liquid is salted)
- 2 medium sweet potatoes, peeled and cut into bite-size pieces (1 1/2 pounds)
- 59.14 ml diced dried apricot
- 473.18 ml cooked chickpeas
- 59.14 ml raisins
- 29.58 ml lemon juice
- 59.14 ml sliced almonds
directions
- In a medium saucepan, combine the onion, garlic, ginger, and wine or sherry. Cover and sweat over low heat for 5 minutes. Add the cumin, cinnamon, paprika, and red pepper flakes and cook, uncovered, 1 minute longer. Add the water or chickpea cooking liquid, salt, sweet potatoes, and apricots. Bring to a boil, cover, and simmer until the sweet potatoes are just tender, about 15 minutes.
- Add the chickpeas, raisins, and lemon juice. Cook, stirring occasionally, for about 5 minutes, until the chickpeas are hot. Add the sliced almonds.

I'm just a girl whos passion is for cooking, well some people would call it an obbsession rather.... I am a college student at RIT going for food management and prep, my favortie things! Most of my orignal recipes are made from left overs since I cook for one or two most days so there are always left overs in my house. I play mad scientist most days in my kitchen with left over chicken breasts lol. I am also a health food freak and a major gym rat, so I am always on the look out for good subs for the more unhealthy ingredients in most recipes. Also I am just starting to take pictures of the food I make on this site, so my photos are anything but stellar yet so I will not be offended in any way if you chooses not to use my pictures.
