No-Bake Maple Peanut Butter Cookies

• Cook Time: 3 mins

Ingredients:

Yield: 18 cookies

• 1 ½ cups sugar
• ½ cup milk
• ¼ cup maple syrup
• ½ cup creamy peanut butter
• 2 teaspoons vanilla extract
• 2 cups old fashioned oats

Directions:

1. In a heavy medium size saucepan, combine sugar, milk and syrup.
2. Bring to a rolling boil, stirring frequently (important to bring to rolling boil or cookies will not set up).
3. Boil for 3 minutes.
4. Stir in peanut butter and vanilla.
5. Stir in oats.
6. Drop by rounded teaspoons onto waxed paper.
7. Cool for 3 to 4 hours, until firm.

These cookies were very yummy and nice change from the no-bake chocolate cookies. My husband loved them. The only thing I did different was add approx. 2/3 cup more of oatmeal as I found them too runny to put on the wax paper as is. Thanks for a nice recipe
