Mum's Onion and Watermelon Salad

"This is a recipe my mum used to make in summer. Very refreshing and nice. It would probably work with a balsamic vinaigrette."

  • Scoop out a whole watermelon using a small curler (so that the flesh is in balls).
  • Dice two or three white onions and fresh mint- to taste (or parsley in a pinch).
  • Mix through and enjoy.

  1. What a great salad and so refreshing. Measurement-wise, I used 900 grams of watermelon cubes, 1/4 of a small white onion and 1/4 teaspoon of dried mint -- no fresh on hand. I may sprinkle over a couple of teaspoons of balsamic vinegar before it goes to the dinner table. Made and reviewed for Pick a Chef in April 2007.
     
  2. if you use an orange, peeled and cubed instead of watermelon..just as nice

  1. I was shown how to make this by an Italian neighbours grandma around about 1980, she used thinly sliced white onions and a really good splash of French dressing. Was even better the next day, slightly pickled. I’m salivating!
