    This is a recipe my mum used to make in summer. Very refreshing and nice. It would probably work with a balsamic vinaigrette.

      Scoop out a whole watermelon using a small curler (so that the flesh is in balls).

      Dice two or three white onions and fresh mint- to taste (or parsley in a pinch).

      Mix through and enjoy.

      What a great salad and so refreshing. Measurement-wise, I used 900 grams of watermelon cubes, 1/4 of a small white onion and 1/4 teaspoon of dried mint -- no fresh on hand. I may sprinkle over a couple of teaspoons of balsamic vinegar before it goes to the dinner table. Made and reviewed for Pick a Chef in April 2007.
