ingredients
- 12 1⁄3 ounces lite firm silken tofu (1 package Mori-Nu)
- 1⁄2 cup icing sugar
- 2 tablespoons instant coffee granules
- 3 tablespoons unsweetened cocoa
- 1⁄2 teaspoon vanilla
directions
- Combine all ingredients, either with an electric mixture in a large bowl, or in a food processor.
- Mix for several minutes, or until smooth and fluffy.
- Place in small serving dishes.
- Chill for several hours before serving.

This turned out quite well. I did find it a bit too chocolatey for my taste, so next time I would probably reduce the amount of cocoa in the recipe. Although I really enjoy tofu, I had never had it in a dessert before; I was a bit weary, to tell the truth, about trying this. However, I could not tell that it was tofu I was eating! Thanks for an intuitive new dessert recipe!

This was excellent! I used 5 tbsp of mocha hot cocoa mix instead of the coffee & cocoa, but otherwise stayed true to the recipe. My mother came over for something and I gave her a taste; she said it was the smoothest she had ever tasted and went and bought tofu on the way home so she could make some! Even my kids loved it. Wonderful!
