I needed an interesting way to serve fruit when I had 4 guests for dinner one night, and I looked at the lovely peppermint growing in my garden for inspiration. :) This salad gets much better with chilling, and really hits its peak the next day, making for luscious leftovers or an easy make ahead side.
Directions:
1
Wash, trim and cut strawberries into bite sized pieces.
2
Drain canned fruit. Do not rinse.
3
Chop mint finely.
4
Mix everything together.
Ratings & Reviews:
This was a hit! Made it in the motorhome (easy with the canned fruit!) We had it for breakfast with some French toast. Would have been good on the ice vream if it had lasted that long :)

This was a very nice ending of a spicy dinner. Very refreshing and the mint really added to the dish. Made this for ZWT3.
