Perfect. I substituted dry sherry for the mirin.

Another vote for PERFECT rice. I was out of mirin so I substitued 1 tbls sherry and 1 tbls water and it was still delicious.

Wonderful, easy-to-follow recipe. We make it regularly and it is always a huge success! We do not use a kelp leaf; and we substitute Stevia or Xylitol for the sugar. Cannot tell the difference in the finished dish, and it cuts back on our daily sugar in-take. This recipe delivers what it advertises - perfect sushi rice.

Excellent! I have struggled with rice in general for a long time and was quite intimidated by sushi rice. This is a great explanation and the rice was fabulous!

Really good sushi rice. Now I don't have to buy those powder to mix with sushi rice every again. The only difference is after I mix all the ingredients, I chuck everything into the rice cooker and it turned out very nicely. The same with if I use powder. Next time, I will put just a tiny little less water so that the rice is a bit hard. Thanks for the recipe.

This was wonderful. I made this just as written and we thought it was perfect. Its so simple, yet makes such a complicated "looking" product. We love sushi and I have been experimenting with different ingredients, but without the perfect rice you don't have sushi....this is that "perfect" rice. Thank you so much for sharing this with me.....I will use it often.

This was awesome. First time making sushi and this rice was really wonderful to work with. I didn't make sure the sugar was completely dissolved first, so I had a little bit of sugary-ness to deal with, but that didn't bring it down at all. Still great. A little sweet, I may cut the sugar just a bit next time. Nice and sticky and a great flavor. Cooked in my rice cooker, then followed directions for dressing. Made for recipe 261193. Thanks so much!

Perfect sushi rice, indeed. I made this in my rice cooker with no problems; it was my first time making sushi, too, and this rice worked great.

Worked great! Dont taste it immediatly after mixing in the seasoning after cooking. It wont taste that good. Wait for it to settle into the rice.

I didn't have any mirin on hand, so I just skipped that, but otherwise I followed it as is. I thought it tasted fantastic, and I think the mirin might've even made it too sweet for my taste. Thanks for the great recipe. It was wonderful for my avocado rolls!

I had similar directions off the back of a Sushi rice I had before. This time I bought regular short grain rice (Sushi rice is too expensive where I live) so I needed directions to cook it and this is exactly what I needed. Great recipe even with regular short grain rice.

Oh my gosh. This is the best rice I have ever tasted in my life. It almost didn't make it into the sushi rolls, I kept sneaking bites of it! It is the perfect mix of tangy, salty, and sweet. I didn't have the kelp leaf, but I'll have to pick some up for next time!
