Mexican Skillet Cabbage

Ingredients:

Servings: 8

• 1 head cabbage , shredded
• 2 slices bacon
• 2 garlic cloves , minced
• 2 (14 ounce) cans rotel
• salt
• pepper

Directions:

1. Fry bacon in a large skillet.
2. When bacon is crisp remove from pan, crumble, and set aside.
3. Add garlic to skillet and sauté for 1 minute or until aromatic.
4. Add cabbage to the skillet and stir to coat in bacon drippings and garlic.
5. Add Rotel, reserved crumbled bacon, salt and pepper and stir to combine.
6. Simmer over low to med heat until cabbage is soft, about 20-30 minutes.

I thought this recipe was great, my family thought it was too spicy. Good thing I do the ratings :}. I cut the recipe in half, but still used two cloves of garlic. From the reviews I knew it would be spicy so I served it with a plain poached chicken breast with colby jack cheese on top.

We thought this was a good way to have cabbage as a side dish. It was a little spicy so next time I think I'll try 1 can of Rotel and 1 can of plain diced tomatoes. I also used turkey bacon to reduce the fat a little bit.

Made for ZWT3(Mexico). Great! I had never used Rotel before -- I think they're a bit spicy for me, but that's not the recipe's fault. I thought this was a great way to cook cabbage without using much fat. I used turkey bacon, so there wasn't a lot of bacon fat to cook in -- but I don't think it mattered. Very flavorful!
