Mexican Casserole - Weight Watchers

"This is a very different variation of "recipe #135814". This is a little easier and quicker and I wanted to see the nutritional info on it. This is a great WW recipe as it's high in fiber, low in fat and is very filling. This can be OAMC as it freezes and reheats well after cooking. I havn't tried freezing before cooking though. It could also easily be made vegetarian simply by subbing the hamburger for another type of bean or meat substitute. Edited to add that these are *very* large servings and I calculated them to be only 7.5 points each if calculated using only 4 servings."

  • Brown hamburger and onions in large skillet, until thoroughly cooked.
  • Add tomatoes, corn, back beans and crushed chilies, mix well.
  • Simmer for 10 minutes, stirring occasionally.
  • Mix in sour cream, simmer another 10 minutes.
  • Top with cheese when serving.

  2. We really enjoyed this recipe. I omitted chiles and added about 8oz of salsa that I was needing to use up and served with some cheesy bread. This had a nice, mild flavor. My kids were skeptical, but ended up enjoying it as well. Thanks for the recipe, Sam!

  5. My daughter prepared this recipe tonight since I wasn't feeling well. She didn't have diced tomatoes so she used mexican stewed tomatoes and no chilis using ground turkey breast (used what was thawed). We loved it! It was so good. Our birds enjoyed it too. Thank you for sharing.

  2. First of all, dear reviewers out there, when you review a recipe, make it for the actual recipe. When you add salsa and taco chips, substitute ground turkey for beef, add taco seasoning, etc., you are not reviewing the recipe!<br/><br/>I made this exactly as written, with no substituted ingredients, for my teenaged son (who needs to lose a few pounds) and myself. It is not a "casserole," which is baked in an oven, but more on the order of Hamburger Helper. It came out as a bland greyish mess, completely unappetizing, and like something that would be served on metal trays in a prison cafeteria. I would not recommend this to anyone. My son was a good sport and ate it, but said, "not my favorite, Mom." I ended up eating the leftovers at lunch for three days so I wouldn't waste the food or the money I spent at the grocery store. The ACTUAL Weight Watchers Mexican Casserole recipe looks pretty good, so I may try that one, but do yourselves a favor out there and do not make this!!
     
  3. This was really good! Since others commented on seasoning, I added about a tblsp garlic salt, and used 2 cans of Rotel (one mild one Mexican) in place of the tomatoes and chile. I also used ground turkey instead of beef, my personal preference. Overall, a great recipe! Thanks!
