  • Marinate portabellas in 1 cup soy sauce and the crushed garlic. Set aside until the rice is done.
  • Combine vinegar, water, brown sugar, catsup, and 2 tablespoons soy sauce. Bring to a boil. Add rice and reduce to simmer for 35 minutes or until soft.
  • Stir fry the onions and bell peppers until the onions are translucent. Add pineapple chunks until to warm.
  • Make a bed of rice for the mushroom and top with stir-fried peppers, onions, and pineapple.
