What a lovely recipe Sharon. I used frozen mangoes. They worked great in this recipe. The texture of the syrup was silky, thick and oh so delicious. I had an extra mango to use, so I chose this recipe and made half a batch. We used it to make a cocktail, which we mixed the mango lime syrup with a 1 1/2 ounces of vodka and a splash of Club Soda. This was very easy to make, however, it was just a tad bit too sweet for me otherwise I would have given it 5 stars. Mangos are naturally sweet and I think the extra sugar wasn't really needed. But that's just my taste. I mixed it with sparkling mineral water because I don't like to drink soda anymore - so I'm always looking for something to jazz up selzer or mineral water.
