Lima Bean Soup With Tomato

Ingredients:

• 20 ounces baby lima beans , cooked and drained
• 2 tablespoons onions , chopped
• ¼ teaspoon fresh thyme, chopped or 1⁄8; teaspoon dried thyme , crushed
• 1 medium garlic clove , minced
• 2 tablespoons butter
• 14 ounces chicken broth
• 14 ounces beef broth
• 1 cup tomato , diced (can be from a can)

Directions:

1. Mash about 2 cups of the lima beans with a fork and set aside.
2. In a saucepan, saute onion, thyme, and garlic in butter until tender, about 5 to 7 minutes. Add mashed lima beans, whole lima beans, broths, and tomato. Simmer a few minutes to heat through and serve.
