Slimming world friendly- the semolina needs to be syn pointed Serves 6

Ingredients Nutrition

  • 1 12 kg potatoes (peeled and chopped into chunks)
  • 1 lemon, juice of
  • 2 tablespoons semolina (ground)
  • low-fat cooking spray

Directions

  1. Preheat oven to gas mark 7, bring a pan of water to boil and add the potatoes and some salt. Simmer for 10 minutes. Drain from pan and shake to roughen the edges. Spray with low fat cooking spray and sprinkle over semolina shaking to lightly coat the potatoes.
  2. Roast in oven for 30 mins sprinkling over lemon juice half way through cooking time.
