  • Slice the tomatoes and onion very thinly.
  • Sprinkle on the salt and douse with lemon juice to your taste. Toss together and serve next to or on top of pilau.

  1. We made this as a side for Anina's Kenyan Pilau and ended up mixing it into the finished dish. By itself, it was very, very oniony, but it was quite tasty as an accompaniment to something else. We weren't really sure how much lemon juice and salt was appropriate and put in quite a lot. To cut the strength of the onion flavor a little, we added a dash of balsamic vinegar, which made a huge difference.
