June's Addiction (Cucumber Sandwich)

"My Aunt June got my whole (greater) family making these. They really are addicting. This is my first recipe posted. These would make nice appetizers. I like them for a light brunch. (Update) Dill Rye Bread is made by Oroweat. It has green on the packaging. You can use regular rye but I need the dill rye. I also love using sliced/quartered cherry or grape tomatoes when I don't grow my own. They look really pretty on top and usually have a good flavor in this. Also if you really like pepper this is a great recipe to really load it on."

  1. This is good! DD (toddler) loves it too!! I used rye bread with flax seeds, Helmans olive oil mayonnaise to be soy free, regular tomatoes, English cucumber, sea salt and pepper.
     
  2. We grew up making these, especially during the summer when we had fresh veggies from our garden. I usually just use whatever bread we happen to have at the time. They are delicious, and it's good to know others enjoy it just as much!
     
  3. This recipe was reviewed for Spring 2007 PAC. Easy, light and tasty! It reminded me how much I like rye bread. The only thing I will change is to make it with 2 slices of bread instead of open-face. I don't know if I am just clumsy but I kept losing my cucumbers (that will never do)! I am trying to lighten up my menus and this is the ticket for lunch. Thank for posting your family favorite. I meant to add a comment. I am guessing that you are quite fond of peanut butter (your name) and the way we always had cucumber sandwiches when I was growing up (still do) is to spread some P.B. on your favorite bread and top with cucumbers and another slice of bread. So yummy!
     
  4. PB&J....These are great! I eat these and variations all the time, and they are a favorite food of mine. As a matter of fact, most anything you can (or would)put cukes on is going to get a high 5 from me. This is what I had this morning for breakfast with my smoothie, but used cream cheese instead of mayo. I hold the mayo for later in the day. Thanks for posting. (BTW, these are also great with ABM french bread w/dill and garlic).
     
  5. A very easy and tasty snack! I made a super-June's Addiction with a couple of slices of really flavoursome tomato and a couple of slices of cucumber, and I used low fat mayonnaise - on fresh rye (I wasn’t sure what dill rye is): a delicious combination. Such a simple combination of ingredients, and the mayonnaise, pepper and salt were ample flavouring to enhance the main ingredients. Thanks for sharing, and hope that you post some more recipes soon!

I enjoy cats, cooking, art, oil painting. I enjoy watching The Aqua Teen Hunger Force Show with my youngest son who is going away to Cal Polly San Luis Obispo this fall. Our oldest son is in graduate school at Cal State Long Beach. Go Beach! We will be empty nesters and I feel ambivalent about it. My passion has been my family but I look forward to more time for my art work. I love having a garden and I can't hardly eat a store bought tomato. We "home church" as we can't find a church that we feel good about anymore. We're not into the market driven model and believe that if you have to trick people to come it dosn't really leave room for God to work in their lives.
