Indian Raita (Cucumber Mix)

The mixture is served chilled. Raita has a cooling effect on the palate that makes it a good choice along with spicy foods such as currys. Raita is also eaten with kebabs.
Ingredients:
1 cup
cucumber
, grated
1 cup
plain 1% yogurt
2 tablespoons
mint
, chopped
1 teaspoon
cumin seed
salt and pepper
Directions:

Grate cucumber and let sit in strainer over a bowl for about 30 minutes.

Place cucumber and remaining ingredients in a bowl and stir to combine.

This raita went together easily and was quite tasty. My only change was using Greek yogurt. The next time I make this I would toast the cumin seed to bring out more of the flavor. Made for 123 Hit Wonders Tag

Very tasty raita, and a perfect addition to my Indian banquet. I diced the cucumber small and used ground cumin, as that is what I had on hand.
