This is a way to prepare fresh okra before adding it to any recipe so that it doesn't become slimy while cooking. Original recipe from The Complete Middle East Cookbook by Tess Mallos.
I have to say, I don't mind the slime....I've used it so often in gumbo and mixed with tomatoes and onions here in the South that I grew up with it and don't even notice it. But this does work if you are slime intolerant. :)

It worked! They felt slimy when I went to rinse off the vinegar, but perhaps the vinegar brought that to the surface, and it all washed away! Mind you, I didn't mind the slime, but it will be nice to serve these to guests without having to worry about their tolerance of slime. Excellent idea!

It worked! No longer need to call the Ghost Busters to remove the slime, just break out the vinegar and water. This is so easy and works great. Thanks for the post.
