    The authentic lebanese chickpea hommos (humus). This is the recipe provided by the Lebanese Gastronomy Association so I hope nobody will argue about the autenticity :)

    Directions:

      Soak the chickpeas for about 24hours in about 1.5liters water.

      Rinse the chickpeas and cook them in boiled water with the baking soda. This will take about one hour and a half.

      Rinse the cooked chickpeas.

      Mix the garlic with the chickpeas in a blender. You must obtain a pretty thick paste.

      Add the sesame oil and then the sesame oile.

      When served, add a little olive oil on top.
