Homemade Potato Chips

  • Peel, then slice the potatoes very thinly.
  • A mandolin does the best job of this and the slices should be as thin as a wafer.
  • As you slice, drop them into deep, cold water.
  • Bring a deep pan of frying oil to 190 C or 375 degrees F.
  • Dry the potatoes thoroughly, then fry them for a couple minutes until they're crisp and golden.
  • Drain them on paper towels and then season generously with salt.

  1. Thank you so much for posting this recipe!!! These were easy and dElish!!! I bet my husband will like them too! I ran out of chips for his lunches and didn't feel like running to the store just for chips so I decided to make these! For homemade chips these couldn't get any easier or better. I will be extra carefull next time though to cut the potatoes VERY thinly! ONly a few came out not right b/c I didn't cut it thin enough. Definitely will make these again!
     
  2. I made these chips and they were a hit with my husband. I added kosher salt to the water during soaking and they were already nicely salted when they came out of the oil. Trying to cut them thin was a feat. Next time I will use a large mandolin.
     
  3. Very good. I made these for me and my hubby and we liked them a lot. Along with our doggy. We just put salt and dipped in chilli cheese dip.
     
  4. super fast and easy and way cheaper and tastier than store bought. I used olive oil once and peanut oil second and always after.. I like my chips crunchy lol Thanks for posting

This is a picture of me and my husband in Portugal, climbing up above the clouds with our bikes. Our trip may take several years so if it's urgent, it's probably better for you to post in the forums ;) Good food is really important to me -- I am happy to pay extra for food that I feel is produced in a sustainable and ethical way and always try to eat using seasonal produce. When we were in the UK we rarely shopped at supermarkets, trying instead to favour small producers, although we were very lucky in that we lived in London and there was lots of choice. We also were fortunate enough to have a weekly organic veg box delivered to our door, filled with so many lovely vegetables for very little money. It really opened my horizons in terms of the variety of vegetables I eat. If you're in the UK, check out Riverford for a box supplier as they're amazing!
