Healthy Apple Energy Loaf

"I've adapted this from a Rosemary Stanton recipe putting my own little twist on things. This loaf is a bit healthier than many regular loaf and cake recipes. It's free of lactose, butter and eggs and is a great snack when you're on the move or looking for a healthier alternative to satisfy those indulgent cravings!"

  • In a small saucepan heat the dates, honey, bicarbonate soda, apple juice and the reserved apple juice. Bring to the boil whilst stirring then allow to simmer for 2-3 minutes. Remove from heat and allow to cool slightly.
  • In a large mixing bowl mix togther the apple, walnuts, flour and baking powder. Make a little well in the centre and pour in the contents of the saucepan. Mix well until all combined.
  • Pour the mixture into a lined 14 x 21 loaf tin and bake in a moderate oven for 40 minutes, or until the centre is cooked. Allow to cool before cutting into slices.

  1. I made this for the DS's music recreation group where it was enjoyed. I baked at 165C fan forced for 40 minutes and did sub macadamias for the walnuts but it was enjoyed though there was a general comment it would have been nicer with a bit of butter on the slice. Thank you Hayley_11 for a good nice healthy cake recipe, made for ZAAR Chef Alphabet Soup.
     
  2. hhhmmm I had high hopes for this recipe. Mine came out nothing like your pic and was pretty wet. I followed everything a T and did wonder how much juice should be used. It states 1 cup of juice plus the juice that is squeezed from the apples but that can vary. My apples were pretty juicy and my loaf very wet. If there were a guideline of how much the total should be it may be helpful. This did taste good yet just was not very 'loafy' in texture and not what shows in the picture. Would try this again if there were a more clear idea of how much liquid is needed.
     
  3. How healthy this really is questionable. After all, honey and apple juice hold a good amount of sugar. Still, it is probably healthier than many things of this nature. It was more work than I like in a recipe - having to cook part of it, and squeeze excess juice out of apples after grating them; however, it has a very nice texture and flavor. I only baked it 30 minutes in my convection oven and that was too long. The top looked burned, although it tasted fine. It's a recipe that will be used again.
     
  4. This was pretty tasty, we sprinkled cinnamon on it to give it a little more flavor. I was so impressed with how lovely it looked and we baked it at 350 for 40 minutes. Thank you for posting such a great healthy recipe.

Ofcourse this photo isn't actually me, but it's a pic i came across one day and just loved it! Moving on... I'm an Aussie girl and i absolutely love living here (in the food sense lol!) because it's so easy to access foods from all sorts of cultures and it's all so easily accessible! I work in a cafe which is quite fitting, and it's great because i'm around food all the time (and it's free...!). I do a heck of a lot of dancing and am about to enter year 12 (argh, exams and hard work!) so i do a lot of cooking as a way of relaxing. Also a bit of a healthy nut, and i don't tolerate dairy too well, so i'm always looking out for ways to make a recipe healthier and how to make it without dairy! I still enjoy cooking with everything (even if i don't eat it!) and most of the time it's passed onto the rest of the family (who are definitely happy with me doing the cooking fairly regularly!) <img src="http://i23.photobucket.com/albums/b399/susied214/permanent%20collection/adoptedspring08.jpg" border="0" alt="Photobucket">
