(LFRV) This is a quick delicious way to get some greens in and ensure all the iron is absorbed properly thanks to the Vit C in the mangoes. The spinach amount is a starting point and you can always increase it if your tastebuds will allow. You can also switch the water out for coconut water if that's something you do. ENJOY!
WOW, just wow!!!! I normally dont drink these kind of shakes, but the ingredients made me curious and as Im trying to eat more healthy yet satisfying, I thought Id give this a go. And Im so happy I did! The smoothie is thick, sweet, fruity and just plain yummy! I made half the recipe for lunch for myself which yielded 2 tall glasses full of thick puree. I tripled the spinach as I needed to use up a bag and didnt even really taste it. Maybe mine was very mild or my mango (organic) was very bold in flavour. Anyway, I loved this! THANK YOU SO MUCH for sharing this tasty treat with us, Mindy! Made and reviewed for our lovely VIP Veggie Swap #26 September 2010.

Yum. And I thought I don't like spinach in my smoothies! Fresh mango makes it sweet as it was more spinachy tasting with poor frozen mango the first time I tried this. I use baby spinach and recommend it for its easier digestion. I used water but am yearning to try this with coconut water next time. I will be making this again insha Allah (God willing).
