"I used to drool over the potatoes my aunt made at our huge family reunions, but not be able to eat them because they are traditionally cooked alongside lamb. Here is my vegan-ized version. Enjoy!""

Questions & Replies

  1. Did you mean a full head of garlic? It seemed very heavy on the garlic to me and I love garlic. Wondering if you meant a clove of garlic?

  1. The lemon flavour in this dish is really delicious! These got gobbled up by this household, thanks for a tasty potato dish. =)

  2. I love lemon and garlic and this filled the bill. I think I used too much olive oil though. Next time I might try what Bergy did and marinate the potatoes and just spray them when cooking instead of drowning them in oil Great recipe though.

  3. One of my favorite creations by this talented food artist. A simple but thorougly enjoyable dish. Ideal for one of those rainy Seattle nights...

  4. I also think I used a bit too much oil, but they still tasted fantastic (will be purchasing a sprayer soon, so am definately trying again soon). Nice lemony flavour with an explosion of fresh herbs. Served with grilled marinated steaks and a big green salad. Delicous, and my guests enjoyed them. Thanks!

  5. Garlic and lemon are two of my favorite taste combinations. The taters turned out nice and crispy on the outside - I just drained the excess oil through a slotted spoon before eating them. The whole family liked these.

Tweaks

  1. Simple and delicious! I used garlic powder instead of garlic, as a previous reviewer recommended. I omitted the salt and instead, as we are not vegans, tossed the potatoes with some feta cheese after they came out of the oven. Loved it!! Thanks for sharing!!

As an ethical vegan, I'm always on the lookout for tasty, cruelty-free meals. I work in the medical field, but my heart lies with anything and everything relating to animal welfare. I share my home with two each furry (cats) and feathered friends. Something I'd like to encourage all chefs is, don't be afraid to experiment! I'm not always really specific about measurements, and that's because I go by feel, so if you want to add a little more or a little less -by all means!
