ingredients
- 425.24 g can white beans
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 stalk celery, chopped
- 1 carrot, chopped
- 2 garlic cloves, minced
- 14.79 ml oil
- 473.18 ml vegetable broth
- 118.29 ml orange juice
- 4.92 ml soy sauce
- 2.46 ml cumin
- 29.58 ml lemon juice
- 59.14 ml fresh chives, chopped
directions
- Rinse and drain the beans.
- In a saucepan, sauté the onions and other veggies in the oil until tender.
- Add the beans, broth, orange juice, soy sauce and cumin.
- Cover and simmer until everything is tender.
- Add lemon juice and serve hot.
- Sprinkle the tops of the bowls with chives.

I love this soup! It's a really great change from the other soups that I've had. I used kidney beans and black beans and threw in some extra frozen vegetables as well as more cumin, soy and some extra herbs to give it a little boost. Thank you for a great recipe! I also agree with the other review that while it was nice without the lemon, the lemon juice REALLY makes this soup. Don't forget it!

I can't stop eating it, and I've eaten myself into a food coma. <br /><br />4 Stars The recipe is wonderful as is. I can't think of a single improvement and I will most likely make it again. <br /><br />3 Stars This needed a little *something*something*. I might make it again, but will add my own improvements if I do. <br /><br />I love to eat! And I love to cook. I tend to take over the kitchen when I get in there. Even the dog knows the command get outta my kitchen! LOL. Cooking for other people and trying new recipes or foods is FUN! I have a small (but growing quickly!!) cookbook collection and one of my favorite things to do is to read recipes and plan meals. Rachael Ray, Horn of the Moon and Moosewood are favorites of mine. <br /><br />We spend a lot of time outdoors camping, hiking and backpacking. Yup. I cook in the woods too!
