    FACS Teacher's Note:

    My grandpa would always make these for us when we spent the night at his house. They were our absolute favorite... little did we know they were actually quite healthy for us! You can add your own flare to the recipe. These are very versatile muffins. Sometimes we add 1 cup raisins (which I highly recommend). Grandpa also adds flax seed and nuts. Hope you enjoy as much as we do!

    Directions:

      Preheat oven to 400°F.

      Mix flour, baking powder, baking soda, and cinnamon in a large bowl.

      Mix cereal, milk, and sugar in another bowl; let stand for 5 minutes.

      Stir in egg and applesauce to the cereal mixture.

      Add to flour mixture; stir just until moist (Batter will be lumpy).

      Add any optional ingredients in, such as flax, nuts, blueberries, or raisins.

      Spoon batter into muffin pan sprayed with nonstick spray; fill each cup 2/3 full.

      Bake 18 to 20 minutes.

      Serve warm or you can zap in microwave for 10 seconds before eating if you make ahead of time. They will taste as fresh as just coming from the oven!
