German-Style Mashed Potatoes

I found this recipe in a Taste of Home magazine.

• Prep Time: 20 mins
• Cook Time: 20 mins

Ingredients:

Servings: 6

• 3 lbs red potatoes , peeled and cubed
• 2 tart apples , peeled and chopped
• 4 slices bacon , diced
• 2 medium onions , sliced
• 1 tablespoon sugar
• 1 tablespoon cider vinegar
• ¾ teaspoon salt

Directions:

1. Cook potatoes in boiling water for 10 minutes; add apples and cook 10 minutes longer, or until both apples and potatoes are tender.
2. Cook bacon over medium heat until crisp. Remove and drain bacon on paper towels. Reserve 1 tbsp drippings in pan.
3. Saute onions in reserved drippings until lightly browned.
4. Drain potatoes and apples. Add sugar, vinegar, and salt; mash lightly. (These will still be lumpy.) Transfer to a serving bowl.
5. Top with onions and bacon.

Loved this. Only change I made was using only one apple and adding a little butter to the mash. Served it tonight with pork schnitzel, sweet and sour red cabbage and green beans with lemon butter.

These potatoes were amazing!! I was a little nervous about trying them, but now I think they are going to be a new addition to Thanksgiving dinner rather than regular mashed potatoes. You don't really taste distinct apple flavor, just delish potatoes. I did add just a little butter (2tbsp) to make them a little creamier.

These tasted great and were the perfect side dish to our Pork, Veal, or Chicken Schnitzel tonight. Since there were only two of us, I halved this recipe, and please forgive me but I left out the apples. I'll make these again with other German dishes. Thanks for a delicious recipe!
