Fresh Peach Cobbler

This recipe was given to me many years ago by Mrs. Orin Stevens of Fargo, ND. She told me she'd gotten it from a church cookbook. I've used fresh, frozen and canned peaches with equal success.

• Prep Time: 10 mins
• Cook Time: 1 hrs

Ingredients:

Servings: 6

• 3 cups peaches , peeled, pitted and sliced
• 1 ½ cups sugar , divided
• 1 cup flour
• 1 teaspoon baking powder
• ¼ teaspoon salt
• ½ cup margarine
• ½ teaspoon vanilla
• ½ cup milk
• ½ cup water

Directions:

1. Grease a 9 x 13-inch pan and line with peaches.
2. Combine 1/2 cup sugar, flour, baking powder, salt, margarine, vanilla and milk.
3. Stir till smooth.
4. Pour over peaches.
5. Combine 1 cup sugar and water.
6. Pour over batter.
7. Bake 1 hour at 350°F.
8. Serve warm or room temperature.

OMG! This was incredible! I've never made fresh peach cobbler before and it was so easy. I've never even attempted to slice fresh peaches before either. I boiled them for 1 minute, let cool a minute, then the skin came right off. I took a knife and scored the peach all around into 7-9 sections from top to bottom and used my thumbs to pry the slices away from the pit. It worked out well and didn't bruise the peaches at all and they were pretty ripe. I added a shake of cinnamon over the peaches and to the batter. I used 8 small peaches from our local peach farm in SC and cooked in a glass 9x13. I ended up pouring the batter over the peaches (it was not runny batter) and using a spoon to spread it out over the peaches instead of dropping spoonfuls of batter on top. Spreading was the way to go. I took it to a BBQ and everyone loved it!

this is delish! in most recipes, usually cut any sugar amounts in half. for this i cut down the sugar in the dough to 1/2 c. and for the water/sugar mixture i used only 1/3 c. i thought it was still plenty sweet and may cut it back next time to 1/2 c. and 1/4 c. we love vanilla, so i increased it to 1 tsp. PEFRECT! thanks for sharing.

I'd like to give three and a half, but since that isn't an option...The dough is fine, although not very flavorful, but cobbler dough isn't usually. I added cinnamon as a personal preference. The simple syrup over the top of the dough is just a little too much. I would likely halve it next time. I used fresh peaches which produced juices of their own, so I think even with half the syrup, it would be sufficient.
