  • Bring juice, water and salt to a boil in medium saucepan.
  • Add remaining ingredients; reduce heat to low. Cover; simmer 25-30 minutes or until liquid is absorbed.
  • Remove ginger and cinnamon stick; discard.

  2. What a wonderful rice. So tasty and flavorful. It was perfect, just the right amount of spice and apple juice. It made a wonderful salad with fresh fruit. I also used some of it for little fried rice cakes which I added some chopped green apple and sweet onion too...soo great. Thanks for sharing this versatile recipe.

  4. Loved this recipe and I think it could be a really good jumping off point for any number of variations. I cut the recipe in half because there are only two of us and the only difference that made was having to keep an eye on the liquid levels to make sure it didn't boil dry too quickly. I liked the way that the apple juice coated the rice and made it sticky in a good way. We had it with steamed salmon which went well but I think the apple taste would really make it shine with a bit of pork. Made for Vegetarian swap.
     
  5. I loved this, the apple juice is a definite presence but by no means overpowering, in fact this is a delicious fragrant rice to accompany almost anything. The one thing I would say is that if you prefer to microwave your rice, as I do, you may need to check the rice at least once, and possibly add a little more water, I did add maybe an extra 1/4 cup of water. I teamed it up with Recipe #275624 for an absolutely decadent meal, mmmm, a definite repeater! Made for Vegetarian swap#6, Jan 09
