Fluffeh Risotto

Ingredients:

Serves: 20

Yield: 1.0 giant pot

• 100 g butter
• 3 onions , diced
• 4 potatoes , diced
• 1 red pepper , skinned and diced
• 3 cups rice
• 1 fresh chili pepper , diced
• 4 liters water
• ½ tablespoon paprika
• 1 tablespoon salt
• 2 garlic cloves , minced
• 2 teaspoons turmeric
• 2 tablespoons cumin
• 2 kg chicken breasts , diced
• 300 g cashew nuts

Directions:

1. Melt butter in a maHOOsive saucepan.
2. Add onions & red pepper and saute until onions are translucent.
3. Add potatoes and stir until well coated in delicious juice.
4. Add 2 litres water and spices. Boil until potatoes are soft.
5. Add other 2 lt. and rice. Cook rice until soft, adding more water if necessary.
6. Once rice is soft, stir in chicken pieces, cashews and chili and cook until chicken is soft.
