These were great carrots! I love the flavor from sauteeing them; mine got a bit brown and caramelized...yum. I couldn't taste much of the spices, though, and I did use all seeds. Still a great flavor, and easy to make. Will definitely make again!
Oh, wow! And I, too, don't like cooked carrots. I had to use powdered cumin and mustard. And DH doesn't care for caraway. But everyone at Thanksgiving was impressed by this unusually flavored dish. Many thanks!
This recipe is *awesome* and I really do not like carrots. Honestly I dislike carrots so much that I could not bring myself to buy carrot juice, instead I bought orange juice. This recipe is so very tasty and the carrots cook down and caramelised to make an awesome side dish for our lamb. Thank you so much for posting, this is a winner and one for my favourites cookbook!
Excellent carrots. I loved the spice combination, especially the caraway seeds. Next time, I'll use or add some ground spices to deepen the flavor somewhat. With a slice of toasted homemade bread and sliced avocados, this is dinner. Nice recipe Kumquat!
Outstanding carrots! I love carrots, but DH, and DD are so-so about them. They both finished all the carrots on their plates, and that's a big deal for them! I had whole caraway seeds, and whole cumin, but , I did not have any whole mustard seed. I did as the recipe (so smartly!) recommended, and added powdered mustard to the carrot juice when I added it.I did use the butter, listed as optional, and where the olive oil was called for, I used another tablespoon or so of butter in it's place. I used the parsley for last minute "herbage" on this, because I was fresh out of cilantro, and I had everything else on hand for the night's meal, and was too lazy to go out for cilantro, when parsley would do. Worked for us! I would tell anyone, TRY THIS!!
